  • 810 medium shrimp, peeled & deveined
  • 1 cup cooked brown rice
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup diced pineapple
  • 1 cup diced tomato
  • Juice of lime
  • 1 tsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • Salt & black pepper to taste

Instructions

  1. In a skillet over medium heat, toss shrimp with olive oil, smoked paprika, garlic powder, salt, and black pepper. Sear for 2-3 minutes on each side until pink and slightly charred.
  2. In a mixing bowl, combine corn, diced pineapple, diced tomato, lime juice, and salt. Mix well.
  3. Place cooked brown rice at the base of your serving dish. Top with seared shrimp and spoon salsa over it. Garnish with additional cilantro if desired.
