Ingredients

  • 7 to 8 cups seedless watermelon, cubed
  • 1 ½ cups fresh blueberries
  • 1 cup crumbled feta cheese
  • Fresh mint leaves, sliced
  • Fresh basil leaves, sliced
  • Juice of 1 ½ limes
  • 1 tablespoon extra virgin olive oil
  • 1 to 2 tablespoons honey
  • A pinch of salt

Instructions

  1. In a mason jar, combine the lime juice, olive oil, honey, and salt. Shake vigorously until well blended.
  2. In a large serving bowl, add the cubed watermelon, blueberries, mint leaves, basil leaves, and three-quarters of the feta cheese. Gently toss to mix.
  3. Drizzle the dressing over the salad and toss again until everything is evenly coated. Top with the remaining feta cheese and additional mint and basil for garnish. Serve immediately.
