  • 4 cups frozen strawberries
  • 1 cup granulated sugar
  • 1/2 cup water
  • 2 litres strawberry ice cream
  • 3 cups crushed vanilla cookies
  • 1/2 cup melted butter
  • 2 tablespoons corn starch
  • 1/2 cup heavy cream

Instructions

  1. Prepare the Strawberry Sauce: In a saucepan, combine frozen strawberries, sugar, and water over medium heat until simmering. Mix cornstarch with water to create a slurry; add to the fruit mixture until thickened. Remove from heat and cool.
  2. Make the Cookie Crust: Combine crushed vanilla cookies and melted butter in a bowl. Press firmly into the bottom of a springform pan.
  3. Layer with Ice Cream: Spread half of the strawberry ice cream over the crust. Pour half of the cooled strawberry sauce on top.
  4. Complete Layering: Add another layer of ice cream, followed by the remaining strawberry sauce.
  5. Freeze: Cover and freeze for at least 4 hours or until solid. Serve chilled.
