  • 6 tbsp butter (melted)
  • 1 small box (3.3 oz) vegan gelatin
  • 2 bricks (16 oz total) cream cheese (softened)
  • 3/4 cup granulated sugar
  • 2 cups heavy whipping cream

Instructions

  1. Make the crust by processing cookies into fine crumbs, combining with melted butter, and pressing into a greased springform pan. Freeze for 15 minutes.
  2. Prepare the filling by dissolving vegan gelatin in boiling water. Mix softened cream cheese and sugar until smooth. Beat heavy cream and powdered sugar until stiff peaks form; fold into the cream cheese mixture and gelatin mixture.
  3. Assemble by layering half the strawberry mixture over the crust, followed by the cream cheese layer, then topping with the remaining strawberry mixture.
  4. Crush remaining cookies for topping, sprinkle over cheesecake, and refrigerate for at least 4 hours before serving.
