  • 1 box strawberry-flavored vegan gelatin (3 oz, like Jell-O)
  • 8 oz cream cheese, softened
  • 1 cup unsalted butter, softened
  • 23 cups powdered sugar, sifted
  • 1 cup heavy whipping cream (cold)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour three round cake pans.
  2. In a bowl, combine the cake mix and strawberry vegan gelatin powder. Add eggs, milk, oil, sour cream, mashed strawberries, and vanilla. Mix until smooth.
  3. Divide batter evenly among prepared pans and bake for 22-28 minutes until a toothpick comes out clean.
  4. Cool cakes in pans for 10 minutes before transferring to wire racks to cool completely.
  5. For frosting: Beat cream cheese and butter until fluffy; gradually add powdered sugar and vanilla. Then incorporate cold whipping cream until peaks form.
