  • 1 cup homogenized milk
  • 1 teaspoon baking soda
  • 4 tablespoons butter
  • 1 cup dark brown sugar
  • 2 eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 2 cups unbleached all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon kosher salt
  • Sea salt flakes
  • For the Salty Caramel Sauce: 1 cup butter
  • 2 cups brown sugar
  • 1 cup 35% cream
  • 1 teaspoon kosher salt

Instructions

  1. Preheat oven to 350°F (175°C) and lightly butter an 11 x 8-inch casserole dish.
  2. Soak chopped dates in scalded milk mixed with baking soda for about 15 minutes.
  3. In a bowl, combine flour, baking powder, and salt. In another bowl, beat the eggs.
  4. Blend eggs, dark brown sugar, butter, and vanilla in a food processor until smooth. Gradually add dry ingredients and then the date mixture.
  5. Pour batter into the dish and bake for about 30 minutes until golden.
  6. Prepare the caramel sauce by melting butter with brown sugar and salt; add cream gradually until thickened.
  7. Poke holes in the cake after baking and pour one-third of the caramel sauce over it. Let it soak for 15 minutes before serving.
