  • 3 tbsp sriracha sauce
  • 2 tbsp honey
  • 2 tbsp low-sodium soy sauce
  • 2 cloves garlic, minced
  • 1 tbsp lime juice
  • 2 cups cooked jasmine rice
  • 2 cups cauliflower florets

Instructions

  1. Prepare the marinade by whisking together sriracha, honey, soy sauce, garlic, lime juice, and sesame oil in a small bowl.
  2. Marinate the salmon by coating it with half the marinade for at least 15 minutes.
  3. Preheat your oven to 400°F (200°C) and roast the cauliflower tossed with olive oil, salt, and pepper for about 20-25 minutes until golden brown.
  4. Heat a skillet over medium-high heat and sear the marinated salmon until caramelized (about 2-3 minutes per side for cubes).
  5. Add the reserved marinade to the skillet and let it bubble until thickened.
  6. Assemble your bowls by placing cooked rice as the base, topping with roasted cauliflower and glazed salmon.
