  • 1 ½ lbs red mini creamer potatoes
  • 4 cups water
  • 3 tbsp lemon juice
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp black pepper
  • Fresh parsley flakes (for garnish)

Instructions

  1. Preheat your oven to 385°F.
  2. Line a baking sheet with parchment paper.
  3. Thoroughly wash and dry the mini potatoes.
  4. In a bowl, mix cold water with 2 tbsp of lemon juice.
  5. Carve skull faces into each potato using a paring knife and place them in the lemon water.
  6. In another bowl, combine olive oil, remaining lemon juice, salt, onion powder, garlic powder, paprika, and black pepper.
  7. Drain carved potatoes and toss them in the seasoning mixture until well coated.
  8. Arrange potatoes on the baking sheet with carved faces up and bake for about 30 minutes or until golden brown.
