  • 14 oz unsweetened coconut milk
  • 1 teaspoon cumin
  • 1 teaspoon cayenne pepper
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 2 tablespoons lemon juice (freshly squeezed)
  • 1 jalapeno pepper (seeded and chopped)
  • 1 teaspoon turmeric
  • 1 teaspoon coriander (ground)
  • ½ teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon pepper (or to taste)
  • 3 tablespoons olive oil (or coconut oil)
  • 1 tablespoon fresh ginger (chopped)
  • 3 medium tomatoes (chopped small)
  • 2 tablespoons parsley (fresh, chopped or cilantro)

Instructions

  1. In a large bowl, mix cumin, cayenne pepper, salt, and pepper.
  2. Coat the chicken with the spice mixture.
  3. Heat olive oil in a skillet over medium heat; cook chicken until browned (6 to 8 minutes per side). Remove and cover.
  4. Sauté onion, jalapeno, ginger, and garlic until softened (about 5 minutes).
  5. Add chopped tomatoes and lemon juice; cook until tomatoes soften (about 5 minutes).
  6. Stir in coconut milk; simmer until sauce thickens (around 5 minutes).
  7. Return chicken to the skillet; cook on low for another 5 minutes.
  8. Garnish with parsley before serving.
