Ingredients

Scale
  • 2 lbs lamb shoulder or leg, cut into chunks
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 4 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon chili powder (optional)
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup plain yogurt

Instructions

  1. Prepare the lamb by cutting it into chunks and set aside.
  2. In a Dutch oven or slow cooker, heat vegetable oil over medium heat. Sauté chopped onion until translucent.
  3. Stir in minced garlic and grated ginger; cook until fragrant.
  4. Add spices—curry powder, ground cumin, paprika, ground cinnamon, and chili powder—and toast for about 1 minute.
  5. Mix in diced tomatoes along with their juices, followed by the lamb chunks. Cover and simmer on low for about 2-3 hours (Dutch oven) or set slow cooker on low for 6-8 hours until tender.
  6. Stir in plain yogurt just before serving to add creaminess.
