  • 1 ripe avocado
  • 1/4 red onion, finely chopped
  • 2 tablespoons chopped cilantro
  • 1 jalapeño, seeded and minced (optional)
  • 1 lime, juiced
  • Salt to taste
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon chopped parsley
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cooked rice
  • Lime wedges, for serving
  • Fresh cilantro, for garnish

Instructions

  1. In a bowl, toss shrimp with olive oil, paprika, garlic powder, salt, black pepper, and cayenne pepper (if using) until coated.
  2. Preheat your grill or grill pan over medium heat. Grill shrimp for about 2-3 minutes per side until they are pink and opaque. Remove from heat.
  3. In a small bowl, mash the ripe avocado with a fork until creamy. Stir in finely chopped red onion, cilantro, minced jalapeño (if using), lime juice, and salt to taste.
  4. In another small bowl, whisk together mayonnaise, sour cream, chopped parsley, lemon juice, minced garlic, salt, and black pepper until smooth.
