  • 45 asparagus spears
  • 68 cherry tomatoes
  • 1 cup cauliflower rice (fresh or frozen)
  • 1 tbsp olive oil
  • Salt and black pepper to taste
  • Lemon slices

Instructions

  1. Season the salmon fillet generously with salt and black pepper. Heat a non-stick skillet over medium-high heat and add olive oil. Sear the salmon skin-side down for about 4 minutes on each side until crispy.
  2. Meanwhile, preheat the oven to 400°F (200°C). On a baking sheet, toss asparagus and cherry tomatoes with olive oil and sprinkle with salt. Roast for about 10-12 minutes until slightly blistered.
  3. In another skillet, sauté cauliflower rice with diced carrots and celery over medium heat for about 5-7 minutes until tender. Season with salt and pepper.
  4. Char lemon slices by grilling or pan-searing them until caramelized.
  5. Plate the seared salmon alongside roasted veggies and cauliflower rice. Garnish with charred lemon slices.
