  • 2 medium potatoes, peeled and diced
  • 1 cup broccoli florets
  • 1 cup sliced carrots
  • 1 tsp olive oil or butter
  • Salt and pepper, to taste
  • 1 tbsp butter
  • 2 tbsp milk

Instructions

  1. Season the salmon with salt and pepper. Heat olive oil or butter in a non-stick skillet over medium heat and pan-fry the salmon for 3-4 minutes per side until cooked through.
  2. Boil peeled and diced potatoes in salted water for 12-15 minutes until fork-tender. Drain, mash with butter and milk, and season to taste.
  3. Steam sliced carrots for 5-6 minutes and broccoli florets for 4-5 minutes until tender yet bright.
  4. Plate the salmon alongside a scoop of mashed potatoes, steamed carrots, and broccoli.
