  • 1/2 cup brown sugar for topping
  • 1/4 cup chopped pecans for topping
  • 1 1/2 cups very hot water

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, combine flour, baking powder, sugar, salt, cinnamon, nutmeg, and cloves.
  3. In another bowl, mix pumpkin puree, milk, melted butter (or vegetable oil), and vanilla until well combined.
  4. Gradually add the wet mixture to the dry ingredients and stir until just blended.
  5. Pour the batter into an 8-inch casserole dish.
  6. For the topping, mix granulated sugar, brown sugar, and chopped pecans; sprinkle over the batter.
  7. Carefully pour hot water over the cobbler without stirring.
  8. Bake for about 40 minutes or until set in the center.
  9. Allow it to cool for 5-10 minutes before serving.
