- 1 pound pasta (cavatelli or penne)
- 1 cup cherry tomatoes (halved)
- 8 oz fresh mozzarella (cut into small bite-sized pieces)
- 1/2 cup finely chopped red onion
- 1/4 cup chopped pepperoncini
- 1/4 cup finely chopped parsley
- 3 cups basil leaves
- 1/2 cup olive oil
- 1/3 cup pine nuts
- 1/3 cup grated parmesan cheese
- 1 tablespoon lemon juice
- 2 cloves garlic
- 1 teaspoon sea salt
- 1/4 teaspoon black pepper
- Cook the pasta according to package instructions until al dente. Drain and rinse under cold water.
- In a food processor, combine basil leaves, pine nuts, parmesan cheese, olive oil, garlic, lemon juice, salt, and pepper. Process until smooth.
- In a large bowl, mix the cooked pasta with pesto, cherry tomatoes, mozzarella, pepperoncini, and parsley. Toss well to combine.
