  • 3 cups peeled finely diced fresh ripe peaches
  • 1 and ¼ cups granulated sugar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract
  • ½ cup water
  • 1 and ¾ ounce (1 box) SURE-JELL fruit pectin

Instructions

  1. In a medium saucepan, combine diced peaches, sugar, lemon juice, vanilla extract, and water. Bring to a boil while stirring constantly.
  2. Lower the heat slightly and cook for 3 minutes. Sprinkle in the fruit pectin, stirring until fully dissolved. Continue boiling for an additional minute before reducing heat to low.
  3. Mash the mixture using a potato masher or handheld immersion blender until desired consistency is achieved.
  4. Ladle the jam into 8-ounce glass canning jars, leaving about a half-inch clearance from the top.
  5. Allow filled jars to cool for one hour before sealing with lids. Refrigerate overnight to solidify.
