Ingredients

Scale
  • 4 skinless salmon fillets
  • 1 cup dry orzo pasta
  • 5 ounces baby spinach
  • 1 yellow onion (finely chopped)
  • 3 garlic cloves (minced)

  • Low sodium chicken broth

Instructions

  1. Prep your ingredients: chop onion, mince garlic, and season salmon with garlic powder, paprika, salt, and pepper.
  2. In a nonstick skillet, heat olive oil and butter over medium-high heat. Sear the salmon for 3-4 minutes on each side until golden brown; set aside.

  4. Stir in thyme and orzo; toast for 1 minute.
  5. Pour in chicken broth; bring to a boil, then simmer uncovered until orzo is almost al dente (about 8 minutes).
  6. Stir in spinach until wilted, then add lemon juice and Parmesan.
  7. Return the salmon to the skillet and simmer for another 2-3 minutes to heat through.
  8. Serve hot with freshly ground black pepper and chili flakes.
