Ingredients

Scale
  • 1 lb sirloin steak
  • 2 cups cooked grains (quinoa, brown rice, or cauliflower rice)
  • 1 cup cherry tomatoes
  • 1 cucumber
  • ½ red onion
  • ⅓ cup feta cheese (optional)
  • Tzatziki sauce (Greek yogurt, grated cucumber, garlic, dill)

Instructions

  1. Marinate the steak: Combine olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper in a bowl. Coat the sirloin steak with the marinade and refrigerate for 30 minutes to 4 hours.
  2. Prepare tzatziki: Mix Greek yogurt, grated cucumber, lemon juice, minced garlic, dill, salt, and pepper in a bowl. Chill while you cook the steak.
  3. Cook the steak: Heat a cast iron skillet over medium-high heat. Sear marinated steak for 4–5 minutes on each side until desired doneness. Let it rest before slicing thinly against the grain.
  4. Assemble your bowl: Layer cooked grains as a base in bowls. Top with sliced steak and fresh veggies like cherry tomatoes, cucumber, red onion, olives, feta cheese if desired, and finish with tzatziki sauce.
