  • 1 lb boneless, skinless chicken thighs
  • 1 tablespoon soy sauce
  • 1 tablespoon gochujang
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup mayonnaise
  • 1 tablespoon sriracha
  • 1 teaspoon lemon juice
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 cup cooked rice
  • 2 large eggs, scrambled
  • 1 cup shredded carrots
  • 1/2 cup chopped cucumber
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro

Instructions

  1. In a bowl, mix soy sauce, gochujang, honey, sesame oil, garlic powder, black pepper, and red pepper flakes. Add chicken and coat well. Marinate for at least 30 minutes.
  2. Preheat grill or grill pan over medium-high heat. Grill chicken for about 2-3 minutes on each side until fully cooked.
  3. Whisk together mayonnaise, sriracha, lemon juice, garlic powder, salt, and black pepper in a small bowl until smooth.
  4. Start with rice as the base in each bowl. Top with scrambled eggs and fresh veggies. Add grilled chicken and drizzle with spicy mayo.
