  • 23 tbsp key lime juice
  • 1 tsp key lime zest
  • Pinch of salt
  • Optional: a few drops of green food coloring

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, cream together the butter and sugar until light and fluffy, about 3-4 minutes.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Combine milk, key lime juice, zest, and vanilla in a measuring cup.
  6. Gradually add the dry ingredients to the butter mixture alternately with the milk mixture, starting and ending with the dry ingredients. Mix just until combined.
  7. If desired, stir in a few drops of green food coloring.
  8. Divide the batter evenly between the prepared pans. Bake for 28-32 minutes or until a toothpick inserted in the center comes out clean.
  9. Let cool in pans for 10 minutes before turning them out onto wire racks to cool completely.
  10. For the frosting, beat together cream cheese and butter until smooth and fluffy.
  11. Gradually add powdered sugar while mixing well.
  12. Add key lime juice, zest, and salt; beat until fluffy and spreadable. Adjust consistency with more juice for tang or sugar for thickness as needed.
  13. Place one layer of cake on a serving plate, spreading frosting on top. Add the second layer and frost both top and sides.
