2 pounds chicken pieces
1 habanero chile
1 bunch scallions
2 cloves garlic
1 1/2 teaspoons dried thyme
2 tablespoons brown sugar
1 tablespoon ground allspice
2 tablespoons soy sauce
2 tablespoons lime juice
2 tablespoons vegetable oil
salt and pepper to taste
Instructions
Rinse and pat dry the chicken pieces, then set aside.
In a food processor, blend the habanero, scallions, garlic, thyme, brown sugar, allspice, soy sauce, lime juice, vegetable oil, salt, and pepper until smooth.
Place the chicken in a sealable plastic bag and pour in the marinade. Seal and refrigerate overnight for optimal flavor.
Preheat your grill to medium-high heat. Lightly oil the grill surface.
Remove the chicken from the marinade and grill for about 10 minutes per side until charred and cooked through (internal temperature should reach at least 165°F/75°C).
