  • 2 links spicy Italian sausage (chicken or turkey)
  • 2 leeks (white part only), sliced
  • 1 fennel bulb, quartered and sliced
  • 1 large parsnip, diced
  • 1 medium carrot, diced
  • 1 rib celery, diced
  • 4 cloves garlic, minced
  • 1 can whole tomatoes (28 oz), chopped
  • 1 can navy beans (15 oz), drained and rinsed
  • 6 cups chicken stock/broth
  • 1 cup chopped kale
  • 1 tablespoon chopped parsley
  • Juice of half a lemon

Instructions

  1. In a large soup pot, heat oil over medium-high heat. Add crumbled spicy sausage and brown for about 5 minutes.
  2. Stir in leeks, fennel, parsnip, carrot, and celery; season with salt, pepper, and Italian seasoning. Sauté until vegetables are tender.
  3. Add minced garlic and cook for another minute before stirring in tomatoes and navy beans.
  4. Pour in chicken stock/broth and bring to a simmer. Cover and let cook for about 20 minutes.
  5. Stir in chopped kale, parsley, and lemon juice before serving over cooked gnocchi.
