  • 3 cups whole milk
  • 1 can sweetened condensed milk (14 oz)
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • Optional: ½ cup raisins, ½ teaspoon cinnamon, ¼ teaspoon nutmeg

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  2. Cook the rice by bringing 1½ cups of water to a boil, adding the rice, covering, and simmering for 10–12 minutes until tender. Drain and cool slightly.
  3. In a large mixing bowl, whisk together whole milk, sweetened condensed milk, vanilla extract, optional spices, and salt. Lightly beat the eggs separately before combining them into the mixture.
  4. Spread the cooked rice evenly in the baking dish. If using raisins, sprinkle them over the rice before pouring the custard mixture on top. Gently stir to combine.
  5. Place the baking dish in a larger pan filled with hot water halfway up the sides of the baking dish. Bake for 45–55 minutes until golden brown with a slight jiggle in the center.
  6. Allow to cool for 10–15 minutes before serving warm or chill for firmer slices.
