  • 12 tablespoons very cold unsalted butter, diced into cubes
  • ½ cup heavy cream
  • 2 large eggs
  • 2 cups all-purpose flour
  • ¼ cup granulated sugar
  • 1 tablespoon baking powder
  • 1 tablespoon chai spice blend
  • ½ teaspoon kosher salt
  • 1 heaping cup powdered sugar
  • 2 teaspoons chai spice blend
  • 1 teaspoon vanilla extract
  • 3 tablespoons heavy cream
  • 1 tablespoon maple syrup
  • pinch of kosher salt

Instructions

  1. Prepare by chilling butter, heavy cream, and eggs. Whisk one egg with yolk and reserve the egg white.
  2. In a food processor, pulse flour, sugar, baking powder, chai spice blend, and salt until mixed.
  3. Add cold butter and pulse until resembling fluffy cheese curds.
  4. Combine wet ingredients into dry mixture until a slightly wet dough forms.
  5. Shape dough into a disc and chill for 30 minutes in the freezer.
  6. Roll out chilled dough and cut into desired shapes.
  7. Preheat oven to 375°F (190°C) and bake scones for 20-22 minutes until golden brown.
  8. While baking, prepare the glaze by whisking powdered sugar with chai spices, vanilla extract, cream, maple syrup, and salt.
  9. Glaze baked scones once cooled slightly.
