  • 1 large sweet potato
  • 2 cups broccoli florets
  • 2 tsp olive oil (1 tsp for chicken, 1 tsp for potatoes)
  • Salt & black pepper to taste
  • tsp paprika
  • tsp garlic powder

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Rub the chicken breasts with olive oil and season with salt, black pepper, paprika, and garlic powder. Bake for 20-25 minutes until cooked through.
  3. While the chicken bakes, slice the sweet potato into rounds, toss with olive oil and salt, and roast on a baking sheet for 25 minutes, flipping halfway through.
  4. Steam broccoli florets in a pot over boiling water for about 5-6 minutes until tender-crisp.
  5. Once cooked, slice the chicken and assemble all components evenly into meal prep containers.
