  • 500 g chicken breast
  • 1 cup broccoli florets
  • 1 cup green beans
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 2 cloves garlic
  • 2 tbsp vegetable oil
  • 2 tbsp soy sauce
  • 1 tbsp honey or maple syrup
  • 1 tsp sesame oil
  • 1 cup cooked mixed rice
  • Salt & pepper to taste

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken and cook until golden brown and fully cooked. Set aside.
  2. In the same skillet, add another tablespoon of oil and sauté the minced garlic for about 30 seconds until fragrant. Add broccoli, green beans, red bell pepper, and yellow bell pepper. Stir-fry for about 3-4 minutes until tender-crisp.
  3. Return the chicken to the pan with vegetables. Stir in soy sauce, honey (or maple syrup), sesame oil, salt, and pepper. Cook for an additional 2 minutes until heated through.
  4. Serve over warm mixed rice.
