  • 1 tsp vanilla extract

  • 1 can (20 oz) crushed pineapple (with juice)
  • 1 cup chopped pecans (optional)
  • 1 cup sweetened shredded coconut (optional)
  • 8 oz cream cheese, softened
  • 1 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 tsp vanilla extract
  • 23 tbsp pineapple juice (reserved from the can)

Instructions

  1. Preheat the oven to 350F (175C). Grease and flour two 9-inch round cake pans.
  2. In a mixing bowl, combine flour, sugar, baking soda, and salt. Mix in eggs, vanilla extract, and crushed pineapple until well blended.
  3. Fold in optional pecans and coconut if desired. Divide batter between pans and bake for 30-35 minutes until a toothpick comes out clean.
  4. Cool cakes for 10 minutes in pans before transferring them to wire racks to cool completely.
  5. For frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar; mix in vanilla extract and reserved pineapple juice until spreadable.
  6. Assemble by frosting between layers and around the cake; garnish as desired.
