  • 8 fresh basil leaves
  • 10 balls fresh mozzarella (bocconcini or ciliegine)
  • 5 whole black olives (pitted)
  • ½ Pound thinly sliced chicken
  • 1 ½ Ounces balsamic glaze
  • 8 ½ Ounces sun-dried tomatoes (julienne cut)

Instructions

  1. In a mixing bowl, combine olive oil, basil leaves, and salt.
  2. On a serving platter, place mozzarella balls.
  3. Halve black olives and place one half on each mozzarella ball as the pupil.
  4. Wrap each mozzarella ball in a slice of chicken.
  5. Drizzle with balsamic glaze and garnish with sun-dried tomatoes.
