  • 1 cup jasmine rice
  • 1 cup coconut milk
  • 1 cup water
  • 1/4 teaspoon salt
  • 1/4 cup peanut butter
  • 1 tablespoon lime juice
  • 1 tablespoon honey
  • 1/2 teaspoon sriracha (optional)
  • 1 tablespoon water

Instructions

  1. Marinate chicken by mixing soy sauce, honey, lime juice, minced garlic, ground ginger, and optional red pepper flakes in a bowl. Add chicken cubes and coat evenly. Let marinate for at least 30 minutes.
  2. Cook jasmine rice by combining it with coconut milk, water, and salt in a saucepan. Bring to a boil, then reduce heat and simmer for 15-20 minutes until tender.
