  • 2 chicken breasts
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp lemon juice
  • 1 large avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup chopped fresh cilantro
  • 1 cup lettuce or mixed greens (optional)
  • 2 tbsp olive oil
  • 1 tbsp fresh lime juice
  • 1 tsp honey
  • 1 tsp Dijon mustard
  • Salt & pepper to taste

Instructions

  1. Rub chicken breasts with olive oil, lemon juice, garlic powder, paprika, salt, and black pepper.
  2. Preheat the grill or grill pan to medium heat and grill the chicken for 5-6 minutes per side until fully cooked. Let rest before slicing.
  3. In a mixing bowl, whisk together olive oil, lime juice, honey, Dijon mustard, salt, and pepper for the dressing.
  4. In a large bowl, combine diced avocado, halved cherry tomatoes, chopped cilantro (and lettuce if desired). Toss gently.
  5. Top the salad with sliced grilled chicken and drizzle with dressing before serving.
