Ingredients

Scale
  • 4 large boneless skin-on chicken breast halves (1012 ounces each)
  • 3 tablespoons finely minced garlic
  • 1 teaspoon kosher salt
  • ½ cup chopped fresh basil
  • ¼ cup extra virgin olive oil
  • Olive oil, salt, and freshly ground black pepper for skin

Instructions

  1. In a mixing bowl, combine garlic, salt, basil, and olive oil to create a marinade.
  2. Coat each chicken breast generously with the marinade and place them in a gallon zip lock bag to marinate for 4 to 12 hours in the refrigerator.
  3. Preheat your grill to medium heat. Remove chicken from the bag and wipe excess marinade from the skin side; brush with olive oil and season with salt and pepper.
  4. Grill chicken skin-side down for about 8-10 minutes, flipping halfway for crosshatch marks. Flip over to cook for another 8-10 minutes until the internal temperature reaches 155 degrees F.
  5. Let rest covered loosely with foil for about five minutes before serving.
