  • 11/2 cups granulated sugar
  • 11/2 cups egg whites (about 1011 large eggs)
  • 11/2 teaspoons cream of tartar
  • 1/4 teaspoon salt
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) with racks in the top and lower third positions.
  2. In a bowl, whisk together gluten-free flour and cornstarch; set aside.
  3. Blend granulated sugar until super-fine but not powdered.
  4. In a stand mixer, beat egg whites with cream of tartar and salt until foamy. Add vanilla and continue beating.
  5. Gradually incorporate sugar while mixing until glossy medium peaks form.
  6. Gently fold in flour mixture in three additions until just combined.
  7. Transfer batter to an ungreased angel food cake pan and smooth the top.
  8. Bake for 45–47 minutes or until golden brown.
  9. Invert cake onto a bottle to cool completely before releasing from the pan.
