  • 4 boneless, skinless chicken thighs
  • 1/4 cup light soy sauce
  • 3 tablespoons light brown sugar
  • 8 ounces fresh shiitake mushrooms

  • 12 ounces ramen noodles
  • Fresh ginger and garlic

Instructions

  3. Whisk together remaining glaze ingredients and pour over the cooked chicken in the skillet. Cook until thickened.
  4. Slice the glazed chicken after resting.
  5. Strain the broth into a large bowl using a colander to remove solids.
  6. Add mushrooms to the pot; cook for 2-3 minutes before adding spinach and sesame oil.
  7. Boil ramen noodles according to package instructions; drain.
  8. Assemble bowls with noodles topped by broth, sliced chicken, green onions, and desired toppings.
