  • 1 large chicken breast roast (about 800 g)
  • 600 g baby potatoes (red & yellow mix)
  • 5 tbsp olive oil
  • 3 garlic cloves, minced
  • Fresh parsley, chopped
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp paprika
  • Juice of lemon
  • Salt & pepper
  • 1 cup chicken broth

Instructions

  1. Preheat your oven to 200C (390F).
  2. In a mixing bowl, combine olive oil, minced garlic, chopped parsley, thyme, rosemary, paprika, lemon juice, salt, and pepper. Rub this mixture all over the chicken breast.
  3. Toss baby potatoes in a separate bowl with olive oil, salt, and pepper until well coated.
  4. Place the seasoned chicken in a baking dish and arrange the baby potatoes around it.
  5. Roast in the oven for 40-45 minutes or until the chicken is golden brown and cooked through (internal temperature of 75°C/165°F) and potatoes are tender.
  6. For added flavor, deglaze the pan with chicken broth after removing the chicken and potatoes; stir in butter to create a sauce.
  7. Serve slices of chicken drizzled with pan sauce alongside roasted potatoes.
