3 medium potatoes
10–12 medium shrimp
1 cup broccoli florets
1 red bell pepper
1 yellow bell pepper
1 green bell pepper
2 tbsp butter
1 cup milk
1 tsp olive oil
2 cloves garlic
1 tsp paprika
Salt & black pepper, to taste
Instructions
Begin by boiling the cubed potatoes in salted water until fork-tender (approximately 12-15 minutes). Drain and mash with butter, milk, salt, and pepper until creamy.
In a skillet over medium heat, add olive oil and sauté the broccoli and diced peppers for 4-5 minutes until tender but still vibrant.
In another skillet, melt butter with olive oil, then add minced garlic and sauté for about 30 seconds. Add shrimp, paprika, salt, and pepper; cook for 2-3 minutes per side until the shrimp are pink and slightly golden.
Plate the mashed potatoes on one side and arrange the shrimp and veggies on the other. Garnish as desired.
