  • 3 medium potatoes
  • 1012 medium shrimp
  • 1 cup broccoli florets
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 green bell pepper
  • 2 tbsp butter
  • 1 cup milk
  • 1 tsp olive oil
  • 2 cloves garlic
  • 1 tsp paprika
  • Salt & black pepper, to taste

Instructions

  1. Begin by boiling the cubed potatoes in salted water until fork-tender (approximately 12-15 minutes). Drain and mash with butter, milk, salt, and pepper until creamy.
  2. In a skillet over medium heat, add olive oil and sauté the broccoli and diced peppers for 4-5 minutes until tender but still vibrant.
  3. In another skillet, melt butter with olive oil, then add minced garlic and sauté for about 30 seconds. Add shrimp, paprika, salt, and pepper; cook for 2-3 minutes per side until the shrimp are pink and slightly golden.
  4. Plate the mashed potatoes on one side and arrange the shrimp and veggies on the other. Garnish as desired.
