  • 3 lbs beef chuck, cut into 2-inch pieces
  • 1 large onion, finely chopped
  • 3 carrots, sliced
  • 2 garlic cloves, minced
  • 2 cups beef broth
  • 1 lb mushrooms, quartered
  • 2 tablespoons tomato paste
  • 3 tablespoons olive oil
  • Salt and pepper, to taste
  • 1/4 cup all-purpose flour

Instructions

  1. Chop the vegetables and cut the beef into chunks. Measure all ingredients.
  2. Heat olive oil in a large pot over medium heat. Season beef with salt and pepper; brown in batches until well-seared. Remove from pot.
  3. In the same pot, add onion, carrots, and garlic; cook until onion is translucent.
  4. Sprinkle flour over the vegetables and stir to coat evenly.
  5. Return browned beef to the pot with any juices. Stir in tomato paste and add bouquet garni. Bring to a boil then reduce heat to simmer.
  6. Cover and cook gently for about 2 hours until beef is tender. About 30 minutes before serving, sauté mushrooms until golden brown; add to stew.
