  • 1 large sweet onion (chopped)
  • 34 cloves garlic (minced)
  • 1 ½ pounds boneless chicken breast
  • 30 ounces canned cannellini beans (drained)
  • 7 ounces chopped green chiles
  • 1 cup frozen corn
  • 4 cups chicken broth
  • 8 ounces cream cheese (cut into cubes)

Instructions

  1. In a large pot or Dutch oven over medium heat, melt the butter. Add chopped onion and sauté until translucent, then stir in minced garlic for an additional minute.
  2. Add boneless chicken breast to the pot along with ground cumin and dried oregano. Pour in chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for about 20 minutes until the chicken is cooked through.
  3. Remove the chicken from the pot and shred it using two forks before returning it back to the pot.
  4. Stir in cannellini beans, chopped green chiles, frozen corn, and cream cheese cubes. Mix well until cream cheese is melted and evenly combined.
  5. Simmer for another 5-10 minutes on low heat to meld flavors together. Adjust seasoning if necessary.
