  • 1.5 lbs boneless, skinless chicken thighs or breasts
  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1 ½ cups chicken broth
  • 1 tablespoon Dijon mustard
  • ½ teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 2 cups baby spinach
  • Cooked egg noodles or pasta of choice for serving

Instructions

  1. Prepare the ingredients by dicing the onion and mincing the garlic.
  2. Layer the chicken at the bottom of your slow cooker. Add the onion and garlic on top.
  3. In a separate bowl, mix cream cheese, sour cream, chicken broth, Dijon mustard, smoked paprika, salt, and pepper until smooth.

  5. Cover and cook on low for about 6-7 hours or high for about 3-4 hours until chicken is tender.
