Creamy Pesto Salmon with Broccoli & Rice is a delightful dish that combines tender salmon in a rich, fragrant pesto cream sauce, served alongside vibrant steamed broccoli and fluffy white rice.   • 200g salmon fillet, skin removed, cut into chunks
  • 1 tbsp olive oil
  • Salt & pepper to taste
  • 1 cup broccoli florets
  • 1 cup cooked white rice
  • 1 cup heavy cream
  • 2 tbsp basil pesto
  • 1 garlic clove, minced
  • Optional: 1 tbsp grated Parmesan cheese

Instructions

  1. Cook white rice according to package instructions and keep warm.
  2. Steam the broccoli for about 4–5 minutes until bright green and tender-crisp.
  3. Season salmon with salt and pepper; heat olive oil in a non-stick skillet over medium-high heat. Sear salmon for 2–3 minutes on each side until golden and cooked through. Remove from skillet.
  4. In the same skillet, sauté minced garlic until fragrant, then stir in heavy cream and basil pesto. Simmer gently for about 2 minutes until slightly thickened.
  5. Add seared salmon and steamed broccoli to the sauce, tossing gently to coat everything evenly. Serve over warm rice.
