  • 1 tablespoon vegetable oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon curry powder
  • 1 can (14 oz) full-fat coconut milk
  • 1 can (15 oz) chickpeas, drained and rinsed
  • Fresh cilantro for garnish
  • 2 cups all-purpose flour
  • 1/2 cup plain yogurt
  • 1/4 cup warm water
  • 1 teaspoon sugar
  • 1/2 teaspoon baking powder

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Add cubed beef and brown on all sides.
  2. Stir in chopped onion and sauté until translucent. Add minced garlic and grated ginger; cook until fragrant.
  3. Sprinkle in curry powder, stirring for about one minute to toast the spices.
  4. Pour in coconut milk and mix well. Bring to a simmer.
  5. Add chickpeas, season with salt and pepper, cover, and let simmer on low heat for about 30 minutes.
  6. In a mixing bowl, combine flour, yogurt, warm water, sugar, and baking powder. Knead until you form a soft dough. Let it rest while your curry simmers.
  7. Preheat your oven to 450°F (230°C). Roll out dough into flatbreads on a floured surface. Bake on a baking sheet for about 5-7 minutes or until golden brown.
  8. Serve hot garnished with fresh cilantro alongside freshly baked garlic naan.
