  • 2 tsp ground coriander
  • 1 tsp turmeric
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder, adjust to taste
  • 1 tsp garam masala
  • 1 (14 oz) can chickpeas, drained and rinsed
  • 1 (14 oz) can diced tomatoes
  • 1 (14 oz) can full-fat coconut milk
  • Salt and pepper, to taste
  • Fresh cilantro, chopped (for garnish)
  • Juice of 1 lime
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup plain yogurt

Instructions

  1. Heat coconut oil in a large pot over medium heat. Add diced onion; cook until soft. Stir in minced garlic and grated ginger for one minute.
  2. Add spices (cumin, coriander, turmeric, paprika, chili powder, garam masala) and beef cubes; brown on all sides.
  3. Incorporate chickpeas, diced tomatoes, coconut milk, salt, and pepper; bring to a simmer. Cook on low heat for about 30 minutes until beef is tender.
  4. For naan: Combine flour, baking powder, salt in a bowl; mix in yogurt to form dough. Roll into flat rounds.
  5. Preheat a baking sheet at 475°F (245°C); bake naan until puffed (3-4 minutes).
  6. Serve curry garnished with cilantro and lime juice alongside warm naan.
