  • ½ pound Penne pasta
  • 1 tablespoon Olive oil
  • 2 Garlic cloves (minced)
  • 1 teaspoon Italian seasoning
  • 1 pound Boneless skinless chicken breast (cut into bite-sized chunks)
  • Salt and pepper (to taste)
  • 2 tablespoons Butter
  • 3 tablespoons All-purpose flour
  • 1 cup Chicken broth
  • 1 cup Half and half (or all milk/cream)
  • ½ cup Freshly grated Parmesan
  • 1 cup Freshly shredded Mozzarella
  • ½ cup Basil pesto (or more, to taste)
  • Fresh basil (for garnish, if desired)

Instructions

  1. Cook the Penne pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet over medium heat, add olive oil and sauté minced garlic with Italian seasoning before adding diced chicken. Season with salt and pepper; cook until chicken is no longer pink.
  3. Melt butter in the skillet, whisk in flour until golden, then slowly add chicken broth and half & half. Bring to a boil, reduce heat, and simmer until thickened.
  4. Stir in basil pesto and cheeses until well combined. Add cooked pasta and chicken; mix thoroughly.
  5. Serve garnished with fresh basil.
