  • 300g rotini pasta
  • 2 chicken breasts, diced
  • 2 cups broccoli florets
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • Salt & pepper to taste

Instructions

  1. Boil salted water in a large pot and cook the rotini according to package directions. Add broccoli in the last three minutes of cooking. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Cook diced chicken until golden brown (5-7 minutes), then add minced garlic and cook for another minute.
  3. Lower the heat, then stir in heavy cream and chicken broth. Add Parmesan cheese, salt, and pepper; simmer until slightly thickened (3-5 minutes).
  4. Combine the drained pasta and broccoli with the sauce in the skillet, tossing until well coated.
  5. Serve hot; garnish with extra Parmesan and parsley if desired.
