  • 500g minced chicken
  • 1 egg
  • 1 cup breadcrumbs
  • 2 tbsp milk
  • 2 cloves garlic, finely chopped
  • 1 tsp Italian herb blend
  • Salt & pepper
  • 1 tbsp olive oil for frying
  • 1 onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 cup chicken stock
  • ½ cup heavy cream
  • 2 tbsp tomato paste
  • Salt & pepper
  • Fresh parsley, chopped

Instructions

  1. In a mixing bowl, combine minced chicken, egg, breadcrumbs, milk, garlic, Italian herbs, salt, and pepper. Mix until well blended and form into small meatballs.
  2. Heat olive oil in a skillet over medium heat and sear the meatballs until golden brown on all sides. Remove from skillet and set aside.
  3. In the same skillet, add olive oil and sauté onion, red bell pepper, yellow bell pepper, and minced garlic until softened. Stir in smoked paprika, chicken stock, heavy cream, and tomato paste; season with salt and pepper.
  4. Return the meatballs to the skillet with the sauce. Cover and simmer for 10-12 minutes until fully cooked through.
  5. Serve hot garnished with fresh parsley.
