  • 12 oz bowtie (farfalle) pasta
  • 4 tbsp unsalted butter, divided
  • 1 cup heavy cream
  • 1 cup chicken broth (low sodium)
  • 1 cup Velveeta cheese, cubed
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 oz cream cheese, softened
  • 2 tbsp fresh parsley or chives, chopped (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add the bowtie pasta and cook until al dente, about 10-11 minutes. Drain and set aside, reserving a cup of the pasta water just in case.
  2. In a bowl, toss the chicken bites with Cajun seasoning, garlic powder, smoked paprika, salt, and pepper until evenly coated.
  3. Heat olive oil and 2 tablespoons of butter in a large skillet over medium-high heat. Add the seasoned chicken in a single layer: Let it sear undisturbed for 3-4 minutes to get a nice crust. Flip it over and cook through for about 4-5 more minutes. In the last minute, add half of the minced garlic and toss. Remove chicken from skillet and set aside.
  4. In the same skillet, melt the remaining 2 tablespoons of butter over medium heat. Add the rest of the garlic and cook until fragrant, about 30 seconds.
  5. Pour in the heavy cream and chicken broth: Bring it to a gentle simmer. Stir in cream cheese until fully melted and smooth.
  6. Stir in Velveeta cubes, mozzarella, and Parmesan: Continue stirring over low heat until the sauce becomes thick, cheesy, and glossy.
  7. Toss cooked bowtie pasta into the sauce: Stir until fully coated. Add a splash of reserved pasta water if needed to loosen up sauce.
  8. Serve creamy bowtie Alfredo on one side of each plate with seared garlic chicken bites on the other: Spoon extra sauce over top if desired and garnish with parsley or chives if using.
