  • 15.5 oz black-eyed peas, drained and rinsed
  • 15 oz sweet corn, drained
  • 1 cup fresh cilantro, chopped
  • ½ cup red bell pepper, diced
  • ½ cup orange bell pepper, diced
  • ½ cup red onion, diced
  • 1 tsp chili powder
  • ½ tsp kosher salt
  • ¼ cup granulated sugar
  • ½ cup olive oil
  • ⅓ cup white apple cider vinegar
  • 1 tbsp fresh lime juice
  • ¼ tsp garlic powder

Instructions

  1. Drain and rinse the black beans and black-eyed peas; pat dry.
  2. In a large mixing bowl, combine beans, corn, cilantro, red bell pepper, orange bell pepper, and red onion.
  3. In a separate bowl, whisk together the dressing ingredients until smooth.
  4. Pour the dressing over the bean mixture and stir gently to coat.
