Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.
  2. In a medium pot over medium heat, combine the rinsed rice, coconut milk, water, sugar, and salt.
  3. Bring the mixture to a boil. Once boiling, reduce heat to low and cover. Simmer for 18 minutes without lifting the lid.
  4. After 18 minutes, check if all liquid has been absorbed. If needed, cook for an additional 4 minutes without stirring.
  5. Remove from heat and let sit covered for 10 minutes to allow flavors to meld.
  6. Fluff the rice gently with a fork before serving.
