  • 2 lbs beef chuck roast, cut into large chunks
  • 1 tbsp coconut oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry powder
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper, optional
  • 1 tbsp tomato paste
  • 1 can (14 oz) full-fat coconut milk
  • 1 cup beef broth

Instructions

  1. Heat coconut oil in a Dutch oven over medium heat. Sauté chopped onion until translucent, about 5 minutes. Stir in minced garlic and grated ginger; cook for another minute.
  2. Raise heat to medium-high and brown the beef chunks on all sides, then remove from pot.
  3. Lower heat back to medium; add spices and tomato paste to the pot, cooking for about 2 minutes until fragrant.
  4. Return the browned beef to the pot and stir in coconut milk and beef broth. Bring to a simmer.
  5. Cover and reduce heat to low, braising gently for about 2-3 hours or until the beef is tender.
  6. Serve over steamed rice or your favorite grain.
