  • 1 cup vegetable oil or melted butter
  • 2 cups granulated sugar
  • 4 large eggs, room temperature
  • 2 cups all-purpose flour
  • 2 tsp ground cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp vanilla extract
  • 1 cup buttermilk
  • 1 cup chopped pecans, toasted if desired
  • ½ cup brown sugar (optional)
  • 1 tsp ground cinnamon (optional)
  • ½ cup chopped pecans (optional)

Instructions

  1. Preheat oven to 350F (175C) and grease two loaf pans or one bundt pan.
  2. In a large bowl, whisk together oil (or melted butter), sugar, eggs, vanilla extract, and buttermilk until smooth.
  3. In another bowl, combine flour, ground cinnamon, baking powder, baking soda, and salt.
  4. Gradually add the dry mixture to the wet ingredients; mix until just combined. Gently fold in the chopped pecans.
  5. If using the optional topping, mix together brown sugar, ground cinnamon, and chopped pecans and sprinkle over the batter before baking.
  6. Pour batter into prepared pans and bake for 45-55 minutes for loaves or 55-65 minutes for a bundt cake until a toothpick comes out clean.
  7. Allow to cool in the pan for 10-15 minutes before transferring to a wire rack.
