  • 1 small head garlic
  • 1 cup chopped fresh cilantro leaves
  • 1 lime (juiced)
  • 3 to 4 tablespoons extra virgin olive oil (plus more for coating the shrimp)
  • 2 tablespoons harissa (or your favorite chili paste)
  • 1 1/2 pounds peeled and deveined large shrimp
  • Kosher salt
  • Black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Trim the top off a head of garlic, drizzle with olive oil, wrap in aluminum foil, and roast for 10 minutes.
  3. Once cool, peel and chop the roasted garlic.
  4. In a mixing bowl, combine chopped garlic, cilantro, lime juice, olive oil, and harissa; whisk until smooth.
  5. Heat a cast iron skillet or grill over high heat. Season shrimp with salt and pepper and drizzle with olive oil.
  6. Cook shrimp for about 2 minutes on each side until pink (about 5 minutes total).
  7. Toss cooked shrimp in the garlic-cilantro sauce immediately before serving.
